Banana chocolate chip bread

First things first: does anyone out there ever buy the correct number of bananas? In my house they are either all gone in a single day or the whole bunch is brown. Is there any in-between? Does that even exist?

I can’t help it…I see brown bananas and I think banana bread. And I wasn’t even going to post this but I’ve had so many DM me from my stories for the recipe so what the hell…

THE DISH:

Banana chocolate chip bread | makes 3 small or 1 big loaf


THE STUFF:

  • 2 cups AP flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon Kosher salt

  • 6 tablespoon unsalted butter, room temperature

  • 3/4 cups sugar

  • 2 large eggs

  • 3 bananas, the browner the better

  • 1 teaspoon pure vanilla extract

  • 3/4 cup plain (or vanilla) Greek yogurt

  • 1 cup semisweet chocolate chips

  • (Add 1 cup chopped walnuts if you like…my kids don’t:)


THE HOW-TO:

Preheat the oven to 350°F. Coat a standard loaf pan or 3 mini pans with nonstick spray or butter.

In a bowl whisk together the flour, baking soda and salt.

In a mixing bowl, beat together the butter and sugar. Add the eggs, one at a time and then the bananas and vanilla. Gradually add the flour mixture and then the chocolate chips.

Pour into the prepared pans and bake until a toothpick comes out clean, about 55 minutes for a standard loaf pan and 45 minutes for the minis. Yes, you can also do these as muffins (about 18 minutes) or mini muffins (about 14 minutes).
