Blistered shishito peppers

YESSSSSSS!!! Padron peppers are heeeeeere!!!

If you’ve never done this SO SIMPLE dish, do it tonight! It’s SO DAMN easy and SO DELISH. It’s a great side dish on a hot evening and it also makes a great vegetarian appetizer for entertaining.

The trick is to make sure your pan is REAL hot and then to salt generously while the peppers are still hot. Honestly, mine could be slightly more charred. I’m not known for my patience. What can I say? To know me is to love me.

THE DISH:

blistered shishito peppers | serves 4


THE STUFF:

  • 1 basket shishito peppers

  • EVOO

  • Kosher salt


THE HOW-TO:

Heat an iron skillet until it is hot, hot, HOT!!! Like, really hot. Toss the peppers with EVOO and throw them into the skillet. Let them sit until they char and then flip them. Transfer peppers to a serving bowl and season A LOT with salt while they are still very hot. Serve at once!
