Winter citrus salad with Marcona almonds & goat cheese

It’s that time of the year for all things citrus. Let’s start with a delicious citrus salad. I used a mix of naval, blood and cara cara oranges and also included a pink grapefruit that was calling my name! Use whatever you like.

Serve with a simple roast chicken or salmon for a perfect dinner.

THE DISH:

Winter citrus salad | serves 2


THE STUFF:

  • arugula

  • radicchio, torn

  • citrus (oranges, blood oranges, grapefruit)

  • slivered red onion

  • Marcona almonds

  • goat cheese, crumbled

  • EVOO

  • Maldon sea salt

  • fresh mint, chopped

  • fresh basil, chopped


THE HOW-TO:

This is meant to be a rustic salad. Just layer as you go; start with the lettuces, arrange the citrus and then dot with everything else, using the EVOO and salt to season.
