Citrus tarragon salad with smoked salmon

I love a big salad with it’s loaded with all the good stuff. And I can’t like, sometimes I LOVE a dinner that requires zero cooking. 10 minutes of knife work and assembly and this healthy beauty is on the table!

THE DISH:

citrus & tarragon salad with smoked salmon | serves 4


THE STUFF:

  • 8 cups arugula

  • 1/4 cup fresh tarragon leaves

  • 2 oranges, peeled and sectioned

  • 2 blood oranges, peeled and sectioned

  • 1 avocado, sliced

  • 2 tbsp chopped toasted almonds

  • 2 (4 ounces each) filets hot-smoked salmon

VINAIGRETTE:

1 tbsp chopped shallots + 1 1/2 tsp Dijon mustard + 2 tbsp champagne vinegar + 3 tbsp EVOO + Kosher S+P = whisk it all together!


THE HOW-TO:

Toss the arugula and the tarragon and spread out on a platter. Top with oranges, blood oranges, avocado and almonds. Cut smoked salmon filets into large chunks and nestle them into the salad. Drizzle dressing to taste and serve at once.
