French bread pizza

Sorry, Stouffer’s…there’s a new game in town. The best. Start with great fresh bread and top with oozy mozzarella, add roasted cherry tomatoes with garlic and finish with pesto and fresh basil.

Couldn’t be easier, but feels like such a special treat.


THE DISH:

French bread pizza | serves 1-2


THE STUFF:

  • 2 cups cherry tomatoes, preferable multi-colored

  • 3 cloves garlic

  • 1/4 cup EVOO

  • Kosher S+P

  • Small French bread, sliced in half lengthwise

  • 1 ball fresh mozzarella, sliced

  • Pesto

  • Fresh basil


THE HOW-TO:

Preheat the oven to 400°F.

In a small oven-proof pan or dish, combine the tomatoes, garlic and EVOO. Season with S+P, cover and transfer to the oven. Roast until tomatoes are soft, about 35 minutes.  Set aside and turn the oven on to broil.

Lay the French bread on a cutting board and brush the cut sides with the flavored olive oil from the tomatoes. Top with mozzarella slices and transfer to the oven, a couple inches from the broiler. Broil until the edges of the bread are golden brown and the cheese is melty.

Spoon the roasted tomatoes on top and then drizzle with some of the olive oil from the tomatoes. Top with pesto and fresh basil leaves and serve at once.
