Fried egg sando with pesto, turkey & cheese

Breakfast for dinner is a real thing in my house. I love a fast easy egg dish and this one kills!

Other egg sandwich filling ideas:

• chili crisp, scallions & avocado

• cheddar, bacon & tomatoes

• mozzarella, salami & arugula

• pickled onions, feta & sautéed spinach

• chorizo, chives & cherry tomatoes

• chicken apple sausage, cheddar & salsa

Note: all meat and veg should be cooked before you add to the sandwich

THE DISH:

fried egg sando with pesto, turkey & cheese | serves 1


THE STUFF:

  • 2 eggs

  • Kosher S+P

  • 1 tablespoon butter

  • 2 slices sourdough

  • 2 tablespoons pesto

  • 2 tablespoons shredded Monterey jack cheese

  • 2 slices turkey

  • 2 slices Roma tomatoes


THE HOW-TO:

Scramble the eggs in a small bowl with S+ P. Melt the butter in a nonstick skillet over medium to medium-low heat.

Once the butter is bubbly, add the eggs and then immediately drop in the bread. Let it sit for 20 seconds and then flip the bread. Run a spatula around the outside of the egg to loosen the edges. After about 2 minutes flip the entire egg with the bread. Top one side with pesto, cheese, turkey and tomato slices. Fold the other side over to make a sandwich. Cook, flipping one more time, until eggs are cooked, cheese is melted and both sides are golden brown.
