Blue cheese, grilled apricot, thyme and honey tartine

I LOVE APRICOTS!!!! They are so delicious paired with blue cheese and super amazing when grilled. I know blue cheese can be polarizing - this is also amaze-balls with burrata (what the hell isn’t?), goat cheese or brie.

This makes a lovely lunch or a really beautiful side dish next to grilled pork or steaks.

THE DISH:

blue cheese, grilled apricot, thyme & honey tartine


THE STUFF:

  • apricots

  • sliced country bread

  • EVOO

  • freshly ground black pepper

  • blue cheese

  • honey

  • fresh thyme


THE HOW-TO:

Prepare a grill or grill pan to medium-high heat. Halve and pit apricots and toss with a touch of EVOO and big pinch of pepper. Brush both sides of the bread with EVOO.

Grill until apricots and bread are golden brown and have grill marks, about 2 minutes per side.

Slather blue cheese onto toast, top with apricots and sprinkle with thyme leaves. Drizzle with honey and serve at once.
