Pulled pork sandies

Stop what you are doing and make this. You can thank me later. I’ve been making this @Tylerflorence pulled pork recipe for 20 years. It’s the best. The end.

It’s more of a vinegary, Carolina-style rather than a sweet Texas bbq sauce. I served it with cole slaw but it’s also delish with mango salsa.

Here’s my dirty little secret: when I don’t have time or didn’t think far enough ahead (never!!) to cook a pork roast for 8 hours (!!!!) in the oven or slow-cooker, I just buy the pre-cooked carnitas from @TraderJoes. They are barely seasoned and honestly, it’s just too easy. There…I just gave you 8 hours of your life back.

THE DISH:

Pulled pork sandies | makes 6 sandwiches


THE STUFF:

  • 1 cup Dijon mustard

  • 1/2 cup ketchup2 garlic cloves, smashed

  • 1 teaspoon Kosher salt

  • 1/2 teaspoon ground black pepper

  • 1/2 teaspoon cayenne pepper

  • 1 1/4 cups apple cider vinegar

  • 2 packages (12 ounces each) cooked carnitas from Trader Joes

  • 6 brioche rolls

    Cole Slaw

  • 3 cups shredded cabbage

  • 1/2 cup shredded carrots

  • 3 tablespoons mayonnaise

  • 1 tablespoons apple cider vinegar


THE HOW-TO:

In a saucepan combine the mustard, ketchup, garlic, salt, pepper and cayenne. Pour in the apple cider and cook over medium heat, stirring occasionally. Simmer for 10 minutes and then turn off the heat and let it sit.

Shred the pork (it’s a little easier if you pop it in the microwave for 20 seconds) and put in a large mixing bowl. Add the sauce and toss to stir.

To make the cole slaw add the cabbage, carrots, mayonnaise and vinegar. Toss to combine and season, to taste, with S+P.

Pile pork and Cole slaw onto brioche rolls and go to town. We like sweet potato fries on the side.
