Sheet pan kielbasa, sweet potatoes & broccolini

Nothing could be easier than this sheet pan dinner. 5 minutes of prep time and 35 minutes in the oven. Whole 30, FasterWay and Paleo approved, Gluten and dairy free. Done and done!

If your kids need a little carb in there, it would be delicious over Israeli cous cous or buttered egg noodles.

THE DISH:

Sheet pan kielbasa, sweet potatoes & broccolini | serves 4


THE STUFF:

  • 2 sweet potatoes (choose long and thin)

  • 1 large red onion

  • 1 large clove garlic, minced

  • 1 tablespoon ground cumin

  • 2 teaspoons smoked paprika

  • 2 teaspoons chili powder

  • 1 teaspoon Kosher salt

  • EVOO

  • 1 bunch broccolini

  • 1 lb kielbasa


THE HOW-TO:

Preheat the oven to 425°F. Line a sheet pan with parchment paper.

Peel and slice the sweet potatoes 1/4 inch thick (if your sweet potatoes are big and wide, you can cube or cut them into wedges). Pile them on the sheet pan. Cut the red onion into large wedges and add to the pan.

Add the garlic, cumin, smoked paprika, chili powder and salt. Drizzle with 2 tablespoons olive oil and then toss until everything is well-coated. Spread out into a single layer and transfer to the oven.

Bake for 20 minutes and then remove the pan from the oven. Add the broccolini and kielbasa. Drizzle with EVOO and put back in the oven for 15 more minutes.

Spoon into bowls and serve!
