Spiced wedge fries

Spiced wedge fries.

I always love to have a great side dish in my back pocket. This one is so good paired with cheeseburgers off the grill or a roast chicken.

My family loves the double dip for this one: ketchup + mayo. What’s not to love?

THE DISH:

spiced wedge fries | serves 4-6


THE STUFF:

  • 3 small Idaho potatoes, each cut into 8 wedges

  • 2 tablespoons EVOO

  • 2 tsp ground cumin

  • 2 teaspoons smoked paprika

  • 2 teaspoons Kosher salt

  • 1/8 teaspoon ground cinnamon

  • Big pinch cayenne pepper


THE HOW-TO:

Pile potatoes on a parchment-lined baking sheet. Drizzle with the EVOO. In a small bowl, stir together the cumin, smoked paprika, salt, cinnamon and cayenne. Pot over the fries and, using your hands, toss until all potato wedges and we’ll seasoned. Place cut side down in a single layer and transfer to the oven.

Roast, flipping once half way through, u til golden brown, about 25 minutes total.

Serve with ketchup and mayo on the side, if desired.
