Sushi sandwich

I’ve got three teenage daughters who were dying to try this #viral Tik Tok trend. It’s pretty yummy and a super fast and easy lunch.

We did ours with spicy ahi but you could also use smoked salmon, crab or make it vegan with just avocado and cucumber.

THE DISH:

spicy ahi sushi sandwich | serves 1


THE STUFF:

  • nori, one full sheet, one 1/4 sheet

  • steamed sushi rice drizzled with rice wine vinegar

  • furikake

  • sliced cucumber

  • sliced avocado

  • cubed sushi-grade ahi mixed with a bit of mayonnaise + Sriracha + soy sauce + sesame oil


THE HOW-TO:

Lay the full sheet of nori down on a work surface. In the middle, make a square of rice and then sprinkle furikake on top. Add a layer of cucumber and avocado and then the tuna. Add another layer of rice and finish with the 1/4 sheet of nori, placed at an angle.

Fold up all the sides and then wrap tightly in plastic wrap. Transfer to the refrigerator and let sit for 30 minutes. Cut in half and eat at once.

NOTE: you don’t have to do the refrigeration, it just sort of helps it hold in place a little bit better.
