Apple strudel

My farm box has been so full of apples! I love that there are varietals in season all year long! And there is nothing more cozy and yummy to me than an apple dessert.

This one is soooo easy with frozen puff pastry and just a few spices and some apples. A little vanilla ice cream on top is also deeeelicious!

THE DISH:

apple strudel | serves 8


THE STUFF:

  • 2 (any variety)apples, peeled, cored and diced

  • 1/4 cup sugar

  • 3 tbsp brown sugar

  • 2 tbsp all purpose flour

  • 1 rounded tsp pumpkin pie spice

  • 1 sheet frozen puff pastry, thawed

  • Egg wash: 1 egg beaten with 1 tbsp water

  • Baking sugar (bigger crystals)


THE HOW-TO:

Preheat oven to 375°F.

In a bowl stir together: apples, flour, sugar, brown sugar, pumpkin pie spice. Let sit for 15 minutes so apples start to release juices and the mixture becomes syrupy.

On a floured surface, roll out puff pastry to about 12x16-inch rectangle. Dump apples on top leaving border all around. Fold over two long sides, then crimp short sides. Carefully transfer to parchment-lined sheet pan, seem side down. Brush with egg wash, make slits to vent, sprinkle with sugar and pop in that hot oven! Bake until golden brown, about 30 minutes. Cool slightly, slice and serve. Also, no one will hate you if you add a scoop of vanilla ice cream.
