BBQ chicken sliders with provolone & griddled red onions

Ok, so the weekdays are getting hairy around here between sports and back to school night and meetings…so many meetings!

I don’t know about you, but I need easy and FAST dinners in my back pocket right now. This one fits the bill and my kids LOVE!!

A couple of notes…

You can use Hawaiian sweet rolls if you like (I just find them too sweet with the bbq sauce) .

You can double or triple this recipe to make the right amount of sliders for your family.

THE DISH:

Bbq chicken sliders with provolone & griddled red onions | 6 sliders


THE STUFF:

  • 1 small red onion

  • EVOO

  • Kosher S+P

  • 6 brioche slider rolls

  • 4 slices provolone

  • 3 cups cooked shredded chicken

  • 1/2 cup (or to your liking) your favorite bbq sauce

  • Big handful of arugula

  • Little handful of pepperoncini

  • 1 tablespoon butter, melted

  • 1/4 teaspoon garlic powder

  • 1 teaspoon chopped parsley


THE HOW-TO:

Preheat the oven to 350°F.

Griddled onions: cut onion in half and then slice. Heat 2 tbsp EVOO on a griddle pan or in a skillet over medium-high heat. Season with S+P and sauté until golden, about 8 minutes.

BBQ chicken: in a mixing bowl stir together the chicken and bbq sauce.

Assemble sliders on a baking sheet: slice rolls in half, top bottoms with 2 slices cheese, bbq chicken, onions, arugula, pepperoncni, 2 more slices of cheese.

In a small bowl stir together the butter, garlic powder and parsley. Brush the tops of the sliders with the butter mixture. Cover with aluminum foil and bake in the oven until cheese is melty, about 10 minutes.
